Three different red rice recipes with distinct flavors.

1. Cajun Shrimp Rice

2 cups uncooked long grain white rice
2 1/2 cups chicken broth
1 pound large shrimp, peeled and deveined
4 tablespoons butter, divided
1 teaspoon minced garlic
1.5 tablespoon cajun seasoning
1/2 teaspoon pepper flakes (optional)
Parsley for garnish

Season the shrimp with 1/2 tablespoons of Cajun seasoning. Melt 2 tablespoons butter in a large skillet over medium heat. Add the shrimp and cook 2 minutes per side then set aside. In the same pan, Stir in garlic, sauté for a minute then add rice.

Stir in chicken broth, add the remaining cajun seasoning, pepper flakes, bring to a boil, reduce to a simmer and cover. Cook for 20 minutes, stirring 1-2 times throughout.

Add the set-aside shrimp and 2 tablespoons of butter, and mix everything together with the rice. Cover and cook for another minute. Garnish with chopped parsley, if desired, and serve.
