Ingredients
For the Dough:
1 cup glutinous rice flour
2–3 tablespoons sugar
About ½ cup warm water, as needed
1 teaspoon neutral oil (optional)
For the Filling:
⅓ cup sweet red bean paste, divided into 1-inch balls
(Tip: Chill slightly to make it easier to shape.)
For Coating:
1/2 cup white sesame seeds
A little water (to moisten dough before rolling in seeds)
For Frying:
Neutral oil (vegetable or canola), enough for deep frying Instructions
1. Prepare the Dough:
In a mixing bowl, combine glutinous rice flour and sugar. Gradually add warm water while mixing until a soft, smooth dough forms. Add oil for extra tenderness. Let the dough rest for 10 minutes.
2. Form the Balls:
Divide dough into 10–12 equal pieces. Flatten each into a small disc. Place a red bean paste ball in the center and seal the dough around it. Roll gently between your palms to form a smooth ball.
3. Coat with Sesame:
Lightly moisten the outside of each ball with water. Roll in sesame seeds, pressing gently so seeds stick well.
4. Fry the Balls:
Heat oil to 325–350°F (160–175°C) in a deep pan. Fry a few balls at a time, turning them constantly to ensure even puffing and color. Fry for 5–7 minutes or until golden brown and fully puffed. Remove with a slotted spoon and drain on paper towels.
