Philadelphia Strawberry Cheesecake Bars

Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
2 packages (8 oz each) Philadelphia cream cheese, softened
2 large eggs
1/2 cup sugar
1 teaspoon vanilla extract
1 cup sour cream
1 1/2 cups fresh strawberries, halved or chopped
1/2 cup strawberry jam (slightly warmed)

Directions:

Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.

In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press into the bottom of the pan to form the crust.

In a large bowl, beat cream cheese until smooth. Add 1/2 cup sugar, eggs, and vanilla extract. Mix until well combined and creamy.

Gently mix in sour cream until fully incorporated.

Pour the cheesecake filling over the crust and spread evenly.

Bake for 35–40 minutes, or until the center is set and the top looks matte. Cool to room temperature.

Refrigerate for at least 4 hours or overnight.

Before serving, top with fresh strawberries and drizzle with warmed strawberry jam. Cut into bars and enjoy!
