Ingredients:
1 salmon fillet
½ avocado, sliced
½ cup cooked quinoa
1 cup spinach or mixed greens
¼ cup shredded red cabbage
½ cucumber, sliced
Dressing: 1 tbsp olive oil + 1 tsp lemon juice + pinch of salt and pepper
Instructions:
Grill or pan-sear the salmon until fully cooked (about 4–6 minutes per side).
In a bowl, layer quinoa, spinach, cucumber, and cabbage.
Add sliced avocado and top with the cooked salmon.

Serve warm or chilled.
